This chicken parmesan recipe is so simple you don’t even really need to measure ingredients! There are some general guidelines below so you know what to have on-hand. It’s quick to prep and takes about an hour to cook.
2 1/2 lbs boneless chicken breasts
2 large eggs
1/2 C Italian bread crumbs
3 C spaghetti sauce
1 1/2 C parmesan cheese
2 C shredded mozzarella cheese
Trim fat from chicken breasts and cut into bite sized pieces.
Whisk eggs in a small bowl.
Pour bread crumbs into another small bowl.
With a large fork, take pieces of chicken and dredge them first in the egg bowl and then in the bread crumb bowl.
Place coated chicken pieces in the 9 x 13 pan. Continue until all the chicken is dredged and placed in the 9 x 13 pan.
Add a very thin layer of spaghetti sauce over the chicken.
Sprinkle with a layer of onion powder, a layer of garlic powder, and a layer of Italian seasoning.
Add a thick layer of parmesan cheese.
Cover with aluminum foil and bake for 40 minutes at 375 degrees.
After 40 minutes, remove pan from oven and add a thick layer of shredded mozzarella cheese.
Recover with foil and bake for another 10-15 minutes or until mozzarella cheese is completely melted.
Remove from oven and let stand for 10 minutes. Serve over rice or pasta.
Double the recipe to freeze!
This is a great meal to double, make 2 pans and freeze one. If freezing, complete recipe to baking for 40 minutes. Remove from oven, keep covered with foil. Allow to cool. Freeze. When preparing frozen pan, thaw completely, bake for 20 minutes to warm through. Add thick layer of mozzarella cheese and bake for 10-15 minutes. Let stand 10 minutes.
