Recipe: The Perfect Cupcake

It’s easy to make cakes and cupcakes taste extra fantastic with just a few additions to a boxed cake mix!

The Perfect Cupcake RecipeButtercream Frosting
½ cup of room temperature, unsalted butter
½ cup shortening
4 cups powdered sugar
1 teaspoon vanilla
2 tablespoons milk

Using a mixer, cream together butter and shortening until incorporated well. Add vanilla and mix. Add powdered sugar slowly and beat on low until mixed and then for 1 minutes on medium, scrape sides of bowl as needed. Add milk one tablespoon at a time, may increase or decrease as needed. (Makes 3 cups)

How to Make a Boxed Cake Mix Taste More Like Homemade
First, choose a boxed cake mix, I prefer Duncan Hines but have used this method with other brands. I have not tried this with specialty cakes but have had great success with yellow, chocolate and other basic flavors.

Following the guide on the back of the box:

  • replace the required amount of vegetable oil with an equal amount of melted butter
  • replace the required amount of water with an equal amount of milk
  • add an additional egg to the recipe
  • add a teaspoon of vanilla to the mixture

When baking the cake I reduce the baking time by 5 minutes but always check with a toothpick to make sure the cake is done before removing it.

  4. Will this work well with red velvet cake flavor too??

    • Yes, it should work with all boxed mixes. I personally am not a fan of red velvet (GASP) but see no reason why it wouldn’t work.
