Petite Cherry Cheesecakes
2 – 8 oz packages of cream cheese, softened
3/4 cup sugar
2 eggs
1 Tbsp lemon juice
1 tsp vanilla
24 vanilla wafers
24 cupcake liners
1 can cherry pie filling
Beat together cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Line muffin pans with 24 paper liners, place a vanilla wafer in each. Fill 2/3 full with mixture. Bake 375 degrees for 15 – 20 minutes. Top with cherry pie filling. Chill. Makes 2 dozen.
